Fun, Tasty and Kid-Friendly Zucchini Recipes

Green and delicious zucchini is loaded with vitamins A and C, potassium and phosphorus. In other words, this nutritious and bountiful garden vegetable gives your kids a big nutritional boost. We like to encourage our kids to eat zucchini by letting them help us cook kid-friendly recipes, and we think your kids might enjoy these tasty dishes, too!

Zucchini Lasagna

Instead of meat, layer sliced zucchini between noodles, sauce and cheese. Kids enjoy assembling this lasagna, and it tastes delicious. Or try long, thin sliced zucchini instead of the noodles for a gluten free option.

Zucchini Veggie Sauté

Combine cubed zucchini, carrots and peppers in a wok, and sauté the colorful veggie medley in coconut oil, salt and garlic. Let your kids choose different spice combinations to vary the taste of this delicious side dish.

Baked Zucchini Fries

There's no need to eat regular fries when you have zucchini on hand! Simply cut it into strips, dredge the pieces in flour, egg and parmesan cheese and bake until they're crispy. Serve alone or with your kids' favorite dipping sauces.

Grilled Zucchini Pizza

If your kids like pizza, they'll love grilled zucchini pizza. Simply top your favorite pizza crust with cheese, sauce and sliced or shredded zucchini. The veggie adds texture and nutrition to your family's favorite meal.  

Chocolate Zucchini Muffins

Most kids love baking, especially when they can stir shredded zucchini into chocolate muffin mix and enjoy a tasty treat. If you don't like chocolate, make carrot zucchini muffins.
